- 180 g dessicated coconut
- 100 g Natural honey
- Zest 1 lemon
- 60 g lemon juice, (Approx. 1 large)
- 20 g chia seeds
- 1 tbsp coconut oil

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- • Add lemon zest to bowl & mill 1 min/speed 10
• Add almond & mill 8 sec/speed 10
• Add the rest of the ingredients to bowl and mix 10 sec/speed 5
• Roll into balls, then into coconut
• Refridgerate for 1-2 hours to set
• Store in the fridge for up to 4 days

Tip
If mixture is too wet, add extra desiccated coconut. If too dry, add extra coconut oil
For extra protein can add- pumpkin seeds, sunflower seeds, flax seeds, sesame seeds, etc.
Try rolling in Chia, Sesame or Flax Seeds for something different.
