The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Add 250 grams of water, salt and prepared lemons to TM Bowl.
Cook 30 mins, 100 degrees, Reverse Speed 1 (or less)
Lemon rind should be tender.
Let cool and use rind only (discard cooked flesh) in cooking now OR
Pour into sterilised glass, cover and store for months in fridge. Perfect for North African style recipes, Moroccan food, dressings and generally in soups and stews
