- 120 gcastor sugar
- 60 g water
- Dash of brandy (optional)

Recipe's preparation
Mill the sugar on Speed 10 for 3 seconds
Split the vanilla pods and carefully scrape the seeds into the TM bowl with the sugar
Add the water and cook for 10 minutes at 90ºC on speed 2 (it should be a syrupy consistency)
Add the bean scrapes and seal in sterilized jar.
Allow flavours to develop before using

Hi Marg - What do you mean by the "bean scrapes" ? Are you talking about the seeds inside the pods or do you use the vanilla pods too? I have been looking for homemade vanilla essence for a while so was glad to find this one - congrats on making it BTW!

I keep my essence in the fridge and use it very regularly. I add the brandy to preserve it a bit longer.
It gets used up in a few weeks because I love vanilla essence.
