Feijoa and Lime Curd Tart with a Coconut crust

Coconut Crust

  • 180 grams dessicated coconut
  • 3 egg whites
  • 1 tablespoon raw sugar
  • 1 teaspoon lime zest

Feijoa and Lime Curd

  • 300 grams Feijoa pulp
  • 2 Limes, zest and juice
  • 40 grams Butter
  • 3 egg yolks
  • 110 grams raw sugar
  • 30 grams cornflour

Recipe's preparation

    Coconut Crust
  1. Preheat oven to 180 degrees C.


     


    2. Place zest and sugar into bowl and mill 10 sec/speed 10.


     


    3. Add coconut and egg whites, mix 10 sec/counter-clockwise operation/speed 5 or until combined. Use spatula if needed.


     


    4. Press into a 24cm greased loose base flan tin. Use your MC to     level out and press into the sides. 


     


    5. Bake for 10-15 minutes or until golden brown.

  3. 1. Place feijoa pulp, lime juice and zest into bowl. Mix for 30 sec/speed 6 or until smooth and combined.


     


    2. Add butter, egg yolks, sugar and cornflour and cook for 8 min/90 deg/speed 4


     


    3. Allow to cool slightly then pour into tart base.


     


    4. Place in oven and bake at 180 deg C for 25 minutes.


     


    5. Tart wlll still be slightly soft when removed from oven. Allow to cool completely to room temperature before serving. 


     


    6. Garnish with dusted icing sugar and extra lime zest if desired.

Tip

Feel free to adjust the amount of lime juice and zest. I like my curd quite tart so add the zest of both limes but you may prefer less.

    Hello,

    you might like to ask the author of the recipe directly? I for my part could imagine that apples and rhubarb could be nice, may be not with lime juice but with added cinnamon. I just love the crust and whatever filling works for you in different recipes you might like to try with the crust here?

    Thank you for a great gluten-free recipe!

    Having such a simple delicious crust as basic recipe in my collection is fabulous!

    Despite my mum's advice not to try a new recipe if I expect guests (especially somebody I haven't met before) I gave your feijoa tart a go since I had very ripe fruit available. Guests and husband asked for seconds and the tart disappeared quickly.

    I have frozen some pureéd feijoas and now I know what to make from that portion later in the year!
