Weetbix Choc Chip Cookies

  • 150 grams Butter, softened
  • 3 level tbsp vegetable oil
  • 100 grams white sugar
  • 2 level tbsp golden syrup
  • 60 grams Milk, room temperature
  • 200 grams plain flour
  • 1 level teaspoons baking powder
  • 60 grams rolled oats
  • 1/4 level teaspoons salt
  • 3 Weetbix, crushed
  • 160 grams chocolate chip

Recipe's preparation

    Preparation
  1. Preheat oven to 180C fan bake, line 2 baking trays with baking paper
  2. Place butter, vegetable oil, white sugar and golden syrup into mixing bowl.

    Mix 20 seconds, speed 4

    Scrape down sides of bowl with spatula
  3. Add milk

    Mix 10 seconds, speed 4
  4. Add flour, baking powder, rolled oats, salt and crushed weetbix.

    Mix 15 seconds, speed 5, Counter-clockwise operation"Counter-clockwise operation"
  5. Add chocolate chips

    Mix 10 seconds, speed 3, Counter-clockwise operation"Counter-clockwise operation"
  6. Scoop 1 TBSP portions of dough, roll into balls and place on prepared trays. Flatten slightly with fingers or a fork.
  7. Bake for 8-10 minutes, ot until cookies are golden and slightly soft in the centre.
  8. Allow to cool on tray for 5 minutes then transfer to a wire rack.
