Almond Coconut and Vanilla Milk

1 cup activated almonds

  • 165 g Shredded coconut

3/4 tsp vanilla powder

2 medjool dates

1/2 tsp pink Himalayan salt

1000g filtered water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Making 'paste' before adding all water to make milk.
  1. Add activated almonds and all dry ingredients to ThMx bowl

    (Remember to pit the dates!)

  2. Add 200g only of the filtered water to the bowl.

     

     

  3. 10 seconds, speed 7

    Scrape down sides

    10 seconds, speed 7

    Scrape down sides

    Repeat process until a smooth paste is produced.

  4. Making the Milk
  5. Add the rest of the 800g of filtered water to the bowl.

    2 minutes, speed 9

  6. Pour the creamy mixture into a nut milk bag

    Drain/ squeeze into container/jug and serve!

    Lasts 3 to 4 days in the fridge

    Freeze some to use later if desired

Tip

If you scald the implements just before use (including the nut milk bag) the milk stays fresher in the fridge longer.

You can scald (discourages moulds) the almonds before soaking overnight, (and also remove the skins if you choose).

After freezing, once thawed, the milk may need blitzing in the ThMx if it has separated.
