- 15 g Caramel syrup (see tip)

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place Kraken®, Kahlua®, brewed espresso, caramel and ice cubes into mixing bowl- crush 20 sec/"Counter-clockwise operation" /speed 4
- Strain through a fine mesh sieve into 1 cocktail glass, garnish with coffee beans (optional). Serve immediately.

Tip
Brewed Espresso (typically)-
1 shot is 7-10 g ground coffee
Double shot is 16-18 g ground coffee
Note- a general rule of thumb is the 1:2 ratio, so a 7 g shot will have 14 g of liquid. For this recipe I have used 8 g of Coffee to 16 g of water. I make a large batch and then just pour out 30 g for each serve.
Caramel Syrup-
I use the “Juicy Isle Caramel topping” from Woolworths. If you don't want to do the caramel flavour then substitute for 30g of simple syrup. The sweetness cuts through the coffee and rum, creating a smooth flavour.
