Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl! -

Recipe's preparation
- Place raspberries, caster sugar and water into mixing bowl 5 mins/100 deg/ speed 2/MC off. Strain and reserve liquid, allow to cool before use. (Very important to let it cool before adding it to your cocktail)
- Insert butterfly whisk. Add to bowl 120g Gin.
- Add 2 egg whites, 60g of reserved raspberry syrup, lemon juice. Mix 4 sec/speed 4.
- Remove butterfly, add ice and mix 15 sec/ speed 3/
"Counter-clockwise operation" . Strain evenly between two glasses.
- This will be a syrup that you will want to have on hand in the fridge. Enjoy!
