Best Beer Batter for Fish

Ingredients

8 portion(s)

batter for fish

  • 2 --- eggs, separated
  • 1/4 teaspoon pink salt, milled prior in the TMX
  • 50 grams Butter
  • 250 grams S.R. Flour
  • 125 grams Beer of your choice
  • --- plain flour, for coating the fish
  • --- 6-8 pieces of fish of your choice

Recipe's preparation

    Battter
  1. Make sure your Bowl is clean


    insert the butterfly 


    *Add 2 egg whites and 1/4 teaspoon of salt and whip for 3-5 mins/speed 4 or until a stiff consistency. then remove from bowl and set aside.

  2. **Be sure to remove the butterfly 


    Add the 50grams of Butter to the bowl and melt for 30-40sec/50˚C/speed 4.

  3. Add the 250grams of S.R Flour, 125 grams of Beer, and the 2 egg yolks and mix 10secs/speed 5.

  4. Lastly add the the eggwhites back into the bowl and mix for 10 secs/speed 5 or until a smooth consistency is achieved.

  5. To batter the fish- Coat fish in some Plain Flour then into the Batter and Shallow Fry in Hot oil in a Fry-Pan.

Tip

I shallow fry my Beer Battered Fish but Deep Frying can be done with this recipe also.

    Didn't have beer, so used sugar free bourbon & cola! Worked a treat! Followed the advice in the comments & added an extra 50gms Bourbon (was too thick without it).. Yummy tmrc_emoticons.)

    This was a very thick batter and next time I would add 50 gm beer extra, but it certainly kept the fish very moist.

    I used ling fillets and deep fried rather than pan fried.

    This batter was quite thick, so I added another 50g of beer and a large handful of ice cubes (uncles tip from when he ran a fish and chip shop) and mixed another 10 sec on speed 5.

    It was soooo yummy. Took my hubby back to the good old days for the old fashioned fish and chips.
