Mum's Easy Salmon Parcels with Quinoa and Pak Choy

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add carrot, celery and leek to mixing bowl. Chop 3sec/speed5. Scrape down sides of mixing bowl. Chop 3sec/speed5 again. Set aside mixture into a seperate bowl and rinse mixing bowl.
  2. Add water to mixing bowl. Place steamer basket into mixing bowl.
  3. Weigh in quinoa then cook 5min/100/speed4.
  4. Meanwhile place one piece of salmon on a piece of baking paper. Season with pepper. Spoon 2-3 tablespoons of reserved carrot/celery/leek mixture over the salmon piece. This should create an even, thin layer of vegetable mixture over the salmon. Pour 1 teaspoon of soy sauce and a couple of drops of sesame oil over the salmon and vegetables. Fold baking paper over salmon piece to make a parcel and place it in varoma tray. Repeat with the other three salmon pieces.
  5. Place varoma over mixing bowl and steam 12min/VAROMA/speed1.
  6. Meanwhile chop pak choy into two, separating stems and leaves. Rinse thoroughly, removing "grit" from pak choy stems.
  7. Add pak choy to varoma dish. Steam a further 3min/VAROMA/speed1.
  8. Serve quinoa and pak choy onto a plate. Carefully unwrap salmon from parcel and place on the plate (remove skin from salmon if desired). Then pour juices from parcel over the dish. Serve immediately.

Tip

To use broccolini insteat of pak choy, add broccolini to varoma dish at the same time as adding salmon. Then cook all together 15min/VAROMA/speed1 to complete the recipe.
