Salmon Burgers . . . HOWEZAT!

Ingredients

4 portion(s)

Salmon Pattie

  • 700 grams sinless, boneless salmon, (or tinned salmon, drained)
  • 3 teaspoons Dijon mustard
  • 1/2 cup coarse bread crumbs, (fresh TM are best)
  • 1 tablespoon capers, salted, drained
  • Salt and Freshly Ground Black Pepper
  • 2 spring onions, roughly chopped

Burgers

  • 1 long turkish bread, cut into 4, the sliced in half
  • 8 Green Butter Lettuce leaves
  • 4 slices Tasty cheese
  • mayonnaise or tartare sauce
  • 2 Large Red Onions, sliced

Recipe's preparation

    Salmon Pattie
  1. Place quarter of the salmon and mustard into the mixing bowl and chop 5 sec/speed.  Scrape sides of mixing bowl using spatula.  Mix 5 sec/speed 6 until it looks like a paste.

     

  2. Add roughly chopped spring onions and pulse 1 sec/Closed lid/Turbo.

  3. Add remaining salmon to bowl and pulse for 1 secClosed lid/Turbo, stir with spatula and repeat pulse.  Repeat until desired texture.  The patties should have some larger chunks.

  4. Add to the bowl: bread crumbs, capers, salt and pepper and stir with spatula.

     

  5. Shape the mixture into four large burgers.  Place in the refrigerator.

  6. Add a knob of butter to a fry pan, and fry the sliced red onion until soft.  Set aside.

  7. Place some oil and knob of butter into a nonstick fry pan and turn the heat to medium-high.  When the oil is hot, cook the burgers for no more than 2-3 minutes a side, turning once.

  8. Grill the inside of the turkish breads and spread with butter.  Then assemble the burgers. Bread, lettuce, cheese, burger, mayonaise or tartare sauce, cooked onion, top with bread.

Tip

The first time I tried this, I overcooked the patties and they dried out.  The second time, I set the timer and cooked for only 2 minutes each side.  They were perfect, nice and juicy. 

For the Kids

I rolled some small burgers and used a mini entertainig roll with a slice of cheese, lettuce and mayo.  Left out the onion.  My kids (5 and 3 years old) really enjoyed it.
