Steamed Fish Nori Rolls

Ingredients

4 portion(s)

Fish Fillets Rolls

  • 4 fillets fish, (Murray Cod or Ling Fish)
  • 8 sheets sushi nori
  • 2 stalks spring onions/shallots
  • small pieces pickled ginger
  • salt flakes, (to taste)
  • freshly ground white pepper, (to taste)
  • 500 grams water, (for steaming)

Dressing

  • 2 tablespoon lime juice
  • 2 tablespoon fish sauce
  • 1 tablespoon mirin or chinese wine
  • 2 teaspoons Ginger (fresh)
  • 1/2 teaspoon sesame oil

Recipe's preparation

    Fish Fillet & Dressing
  1. Start by placing ginger into TM Bowl and chop for 3 seconds on speed 7.  Scrape into small bowl and set aside for dressing.  Do not rinse bowl.

     2. Add water into TM bowl and place Varoma on top then cook for 10 minutes at Varoma temperature on speed 2.

    3. Cut fish fillets lengthways keeping width at 2 to 3 centimetres.   

    4. Dip both sides of the Nori sheet in a bowl of water.  Then place on a clean, dry tea towel.

    5. Place a piece of fish along one edge of the Nori sheet.  Sprinkle with salt,  pepper, spring onions and roll up to completely encase it. Place into Varoma dish and set aside.  Repeat with remaining fish, Nori and spring onions.

    6. Once Varoma temperature is reached, place Varoma with fish on top of TM bowl and continue to cook for another 4 minutes at Varoma temperature on speed 2.

     7. Meanwhile make dressing by combining the chopped ginger with all other dressing ingredients.

    8. Remove Varoma and lift Nori fish rolls out of tray. Trim off ends, slice each  roll diagonally and arrange on plates with pickled ginger and dipping sauce.

Tip

1. Perfect for entrée as well.

2. For a more substantial dish, you can serve with steamed Jasmine rice as per  TM rice recipe.  Place Varoma with fish rolls when 4 minutes remain in timer.  If desired, steam a few green vegetable like Bok Choy at the same time as the fish and serve to accompany.

3. Match with Verdelho wine to marry perfectly with the salty Nori.
