Lamb and Feta Meatballs

  • 2 garlic cloves
  • 8 sprigs fresh mint, leaves only
  • 300 grams Lamb, diced
  • 2 tsp dried oregano
  • 80 grams feta cheese, cut into cubes (1cm)
  • 1-2 pinches sea salt, to taste
  • 1/2 tsp ground black pepper, to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180°C. Line a baking tray (30 x 40 cm) with baking paper and set aside.
  2. Place garlic and mint into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  3. Add lamb and chop Turbo/1.0 sec/2-3 times, or until a mince consistency is achieved. Scrape down sides of mixing bowl with spatula.
  4. Add oregano, feta, salt and pepper and combine 10 sec/Counter-clockwise operation/speed 2.
  5. With wet hands, form mixture into walnut-sized balls. Place onto prepared baking tray and bake for 15-20 minutes (180°C) or until golden and cooked through. Serve immediately.

Tip

- These Greek-style meatballs are delicious with a yogurt dressing and a green side salad or tabbouleh.

- Enjoy leftover meatballs for lunch the next day in a pita bread or wrap.

- Meatballs can be enjoyed on top of pasta with your favourite pasta sauce.
