Ingredients

Bangalore Chicken

  • 30 grams olive oil
  • 1 --- onion
  • 6 garlic cloves
  • 60 grams fresh coriander
  • 2 Chillies red or green, As spicy or mild as you like
  • 1 tablespoon chicken stock
  • 150 grams water
  • 300 grams coconut cream
  • 1 heaped tablespoon cumin
  • 1 heaped tablespoon coriander
  • 1 heaped tablespoon turmeric
  • 600 grams chicken thighs

Recipe's preparation

  1. Add fresh coriander and chillies, chop on speed 3 for 5 seconds. Scrape down the sides of bowl and repeat. Scrape down the sides of bowl and repeat. Set aside
  2. Add olive oil, onion & garlic. Chop on speed 5 for 5 seconds. Sauté on speed 3 at 100c 3 minutes.
  3. Add coriander, cumin & tumeric. Sauté on speed 3 at 100c for 3 minutes.
  4. Add the coriander & chilli mixture, saute on speed 3 at 100c for 3 minutes.
  5. Add chicken and mix around with spatula to coat with spices. Add coconut cream, stock & water. Cool for 15 minutes at 100c speed 2 reverse
  6. Pour into thermoserver using the basket then return liquid to the bowl, keep chicken in thermoserver to keep warm. Cook sauce for 10 minutes at Varoma temp at speed 3 to reduce sauce or use thickening mode
