Fragrant eggs

  • 4 Eggs, Large, Free range
  • tomatoes, Thinly sliced lightly seasoned
  • pinch Dried oregano (or fresh)
  • 8 Basil leaves, Chopped finely
  • Butter, For greasing and 'dotting'.
  • water

Recipe's preparation

    Eggs
  1. Fill TM bowl 2/3rds full with water and bring to varoma temp. Generously butter 4 ramekins. Sprinkle with half the herbs and layer 2-3 thin slices of tomatoe and break an egg into each.season lightly and dot with butter, then top with remaining tomato and basil. Place ramekins in varoma dish and place in position. Steam on varoma heat until whites are set, approx.6-8 minutes or as you prefer, speed 1-2.

Tip

Serve with sourdough soldiers and cripy bacon on the side.
