Leek & Tomato Risotto with Mussels

Ingredients

4 portion(s)

Risotto

  • 2 Large leeks
  • 60 g olive oil
  • 180 g white wine
  • 400 g arborio rice
  • 2 tablespoons TM stock concentrate
  • 800 g water
  • 300 g tomato puree
  • 2 tablespoons lemon thyme
  • parmesan cheese, to taste

Mussels

  • 1000 grams Fresh mussels

Recipe's preparation

    Risotto
  1.  

    Roughly chops leeks and place into TM, chop for 3 seconds speed 5.

     

    Add olive oil and lemon thyme. Sauté varoma/speed 1/ reverse/6 minutes.

     

    Add 180g white wine, and 400g rice. 100c/speed 2/reverse.

     

    Place in stock, water and tomato puree.

     

    Place washed mussels into varoma and place on top.

    20 minutes/ reverse/ speed 2/100c, with the last 5 minutes on varoma.

     

    Pour risotto into thermoserver and mix in half cup parmesan cheese.

     

    Serve mussels on top of risotto, seasoned with salt and pepper.
