Paleo Banana & Coconut Pancakes with Blueberry Compote

Ingredients

2 portion(s)

Pancakes

  • 80 grams whole almonds
  • 15 grams dessicated coconut
  • 2 eggs
  • 2 small bananas or 1 large
  • 1 tsp gluten free baking powd

Blueberry Compote

  • 125 grams Frozen Bluerries
  • 15 grams honey
  • 10 grams water

Recipe's preparation

    Pancakes
  1. Place almonds in TM bowl and grind 20 seconds at speed 9

    Add coconut to TM bowl  with Almonds and grind 6 seconds speed 9

     

  2. Add remaining ingredients and blend  15 seconds  speed 6

  3. Pan fry on medium heat until small bubbles appear and flip over to cook other side.

  4. Place Blueberries,honey and water in TM bowl. Cook 100 Degrees 3 minutesCounter-clockwise operation speed 1

     

    Stack pancakes on top of each other and drizzle with blueberry compote.

    WOW~ YUM! doubled the recipe-and lucky I did, Very fluffy and tasty- My 4,3, and 1 year old loved them.  I made them into medium sized pancakes, which were very fulling

    Delicious, super healthy & the compote is amazing.

     

    i only used 1 medium banana & would recommend you double  (2 medium  bananas) the mixture if your feeding 3 or 4 people.

    Turned out great, we used 2 small bananas and the consistency was perfect.  Next time i will try coconut flour as the kids didnt like the coconut feel.  The compote was divine, would be good with maple syrup if you dont have blueberries.

    I really enjoyed these pancakes - tasty, quick and easy. The boys (8, 6, 3 & 1) ate them but two of them weren't huge fans of the texture but as we're new to paleo I'm sure this is something they will get used to!

    Have only had my Thermomix a week and just made these for breakfast without the blueberry compote. I'll add more banana next time, don't think my large banana was enough to get the right consistency as it was a little thick but super tasty. So easy and a great paleo recipe! Definitely a recipe I'll be making again.

    What size eggs did you use - when I make them I don't add any other liquid but also softness of banana could change outcome. The mixture is not as runny as a pikelete.Good idea to add a little liqud though. Hope they tasted good.
