Pumpkin, Broccoli and Ricotta Pasta Bake

  • 1200 grams water
  • 320 grams Penne
  • 400 grams pumpkin, Cut into 2 x 2cm pieces
  • 200 grams broccoli, florets
  • 80 grams frozen peas
  • 250 grams ricotta
  • 1 egg
  • 2 level teaspoons Thyme

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Spray a 2 Litre Oven Proof Dish with oil and place the oven at 180 degrees in a fan forced oven.
  2. Place water into mixing bowl and boil for 10-12 mins/100 degrees/speed 1
  3. Add salt and pasta and cook for the indicated time on the package at 100 degrees/Speed 1/ without the measuring cup.
  4. Drain Pasta using the Varoma.
  5. Place 500g of water into the Mixing jug. Place pumpkin into the Varoma and cook for 10 minutes/Varoma/Speed 1.
  6. Add Brocooli to Varoma and continue to cook for another 15 minutes.
  7. Add peas to Varoma and cook for 2 minutes/Varoma/Speed 1
  8. Clean bowl and add ricotta, egg, thyme and cheese.
    Mix Speed 1, Reverese for 30 seconds.
  9. Add pumkin, broccoli and peas and mix using spatuala.
  10. Place into the dish and add in pasta. Stir.

    Sprinkle with more cheese.
  11. Place into the oven and bake for 20-25 minutes until golden brown.
