Thai Aromatic Herb Chicken Served With Cumquat Quinoa

  • 400 grams chicken thigh or drumstick meat, cut into 4cm chunks
  • 1 stick cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon fennel seeds
  • 1 pod whole black cardamon
  • 8 pods whole green cardamon
  • 10 pieces Whole Black Peppercorns
  • 1 piece whole star anise
  • 1 tablespoon cumin
  • 20 grams dry roasted almonds with skins on
  • 1 clove garlic (large clove)
  • 10 grams fresh ginger
  • 1 piece fresh chilli
  • 1 piece fresh rosehip with seeds removed
  • 100 grams fresh green herbs eg chives, parsley, basil, lemon balm, thyme, mint, majoram, (remove all woody stems before placing in Thermi)
  • 140 grams peeled lemon cut into quarters
  • 2 pieces Lemon peel
  • 10 grams fresh kaffir lime cut into half
  • 2 pieces kaffir lime peel
  • 3 leaves Kaffir Lime
  • 100 grams onion
  • 10 grams lavender with flowers and remove woody stems
  • 550 grams water
  • 1 tablespoon coconut oil

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. add to Closed lid cinnamon stick, fennel seeds, black cardamon pod, green cardamon pods, black peppercorns, whole star anise, cumin and grind for 15 seconds on speed 9

     

    add to Closed lid almonds and grind for 5 seconds at speed 9

     

    add to Closed lid garlic, ginger, chilli, rosehip, fresh green herbs, lemon, lemon peel, kaffir lime, kaffir lime peel, kaffir leaves, onion, lavendar and blend for 15 seconds on speed 6

     

    add to Closed lid the coconut oil and cook for 5 minutes at 100 degrees C No counter-clockwise operation at speed 3

     

    add to Closed lid  water and chicken and cook for 17 minutes at 100  degrees C No counter-clockwise operation on speed 1

Tip

Serve  with Cumquat Quinoa which compliments this Thai flavoured dish perfectly. Recipe appears in my recipe.
