Ingredients

Pasta with Anchovies & Breadcrumbs

  • 1 tbsp olive oil
  • 2 cups dried breadcrumbs
  • 30 g olive oil
  • 2 cloves garlic, chopped roughly
  • 50 g tomato paste
  • 250 g warm water
  • 15 anchovy fillets
  • 350 g dried spaghetti, broken in half length
  • 700 g water

Recipe's preparation

  1. 1. Toast the breadcrumbs in a heavy pan, in the tblsp olive oil, stirring until golden brown. Set aside.
    2. Add the 30g olive oil and garlic to TM bowl, and cook 8mins/100deg/speed 1.
    3. Add tomato paste, water and anchovies and cook 10mins/80deg/speed 1. At the end of the cooking period, whizz 10sec/speed 8. Set aside.
    4. Add 700g water and, with the MC off, bring to the boil 4mins/Varoma/speed soft.
    5. With the lid on, MC off, add the spaghetti through the hole in the lid, and cook according to the time recommended on the packet e.g. 8mins/100deg/speed soft. Test consistency of the pasta; it should be al dente. Drain pasta, return pasta to the bowl, add the anchovy sauce, and cook 1min/100deg/speed soft.
    6. Toss a handful of the breadcrumbs through the sauce and some chopped herbs [parsley, basil] and serve with the extra breadcrumbs on the side.
