Coconut Rice

  • 400 g basmati rice, or jasmine rice
  • 500 g water
  • 400 g ml Tin coconut milk, or coconut cream
  • 1 Kaffir lime leaf, optional

Recipe's preparation

    Coconut Rice
  1. Weigh rice into Thermomix basket, in the Thermomix bowl.

    Rinse rice with water from the tap in the sink, return basket with rinsed rice to the TM bowl.

    Add water, coconut milk or cream and lime leaf into TMX bowl with the rice in the simmering basket.  Cook 20 minutes, varoma, speed 4.

    Place into the Thermoserver to keep warm until ready to serve.

Tip

Because this is cooked on Varoma temperature, it's great to steam some extra veg at the same time.

This rice is great to serve with Thai or Indian curries!!

    Very delicious! I didn't need as much rice so used less and decreased cooking time by 5 mins. Still worked really well. Beautiful subtle coconut flavour. Thanks for sharing. 😄

    I really love this recipe, I find that I have to extend the cooking time slightly for our preference, but that's no big deal! I have also added the peel from a lime (I just peel it with a vege peeler) and add this to the the coconut milk in the bottom!

    Thanx, I just tried it before reading your answer... But I found I needed to add a bit more water and cook it for 10 mins longer. Probably because I used a mixture of brown and jasmine rice. Looks perfect for fried rice. having fun experimenting.

    It can depend on the coconut milk or coconut cream you are using - you can put more of it in & use less water to increase the coconut flavour tmrc_emoticons.-)

    Hi guys

    So sorry about the problem we had originally uploaded the recipe using speed 3 & were asked to change it to speed 2, we have now changed it back to speed 3, which helps to circulate the steam better. If you want the flavour to be more coconuty use the coconut cream Ayam organic cocnut cream is great otherwise why not make your own coconut cream using shredded coconut - recipe is on quirky cooking.

    Did this recipe but with 300g of rice which was was almost untouched after 20 mins of cooking. Cooked another 20 mins and it was OK'sh and the coconut taste was very subtle. At the end the basket was completely full which makes me doubt if 400 g would have fitted in, it seemed the rice was too tightly packed to allow steam to circulate.(TM21) Will presevere with less rice which may address the issue. Reading other posts not sure how speed would affect the steaming process and would be interested to hear from others their ideas.

    Yes I normally like to cook my rice on speed 3 but was sent a message from head office to change the speed on the recipe to speed 2 -so I am sorry that it hasn't cooked properly!

    Used basmiati rice and at the end of the 20mins my rice was still mostly raw tmrc_emoticons.( i checked in my EDC and a few other recipes and they all say varoma or 100• speed 4. So maybe the speed 2 is what went wrong?

    I'm not sure what I did wrong! I followed the instructions, but at the end of cooking time there was still heaps of liquid in the bottom of the thermomix and the rice didnt have much of a coconut taste at all

    I really enjoyed this coconut rice, if I had followed the recipe everything would have turned out perfect, I reduced the amount of rice (only 2 of us) and thought the cooking time would change... it doesnt so I just cooked it as per the instructions in the end and it was amazing!!!     Sorry to hear you had gluggy rice, can I ask what type of rice you used? I assume Basmati...this is often caused by the starch in the rice, if you rinse your rice under some running water this washes off the starch and you should find less gluggyness, some brands of rice are worse than others as well tmrc_emoticons.)
