Carrot & Coriander Salad



4 portion(s)

  • 2 large carrots roughly chopped
  • 1 Green Apple Halved
  • 6 sprigs coriander leaves, Or to taste
  • juice of half an orange
  • 10 grams Pepita Seeds
  • 10 grams sunflower seeds
  • 15 grams pine nuts

Baby Spinach to Serve


Recipe's preparation

  1. Place Carrots, Apple, Coriander and the Juice of half an Orange into mixing bowl and chop 2-3 sec/speed 5.

    Scrape down the sides of bowl and repeat 2-3 Sec/speed 5, or until desired consistency is achieved.

    Serve on a bed of Baby Spinach topped with Pepita Seeds, Sunflower Seeds and Pine Nuts

Optional to exchange Pine Nuts with Slivered Almonds, Cashews or nuts of your choice.  Coriander may be substitued to other herbs such as parsley, mint etc.
