Chilli Cashews

Ingredients

250 g

Chilli Cashews

  • 250 g cashew nuts (unsalted)
  • 40 g rapadura (or brown sugar)
  • 2 --- Kaffir lime leaves, (Roughly torn)
  • 1 teaspoon dried chillie flakes
  • 20 g fish sauce
  • 1/4 teaspoon Cinammon, (optional)

Recipe's preparation

  1. 1.     Turn oven on to 180 degrees celsius and line baking tray with paper

    2.     Add sugar and kaffir lime leaves to bowl. Mill 10 seconds Sp10. Scrape down bowl

    3.     Add fish sauce, chilli. & cinnamon if using Mix for 5 seconds / sp 5

    4.     Add cashews. Mix sp2 / reverse / 10 seconds

    5.     Pour onto lined baking tray. Even out with spatula & put in oven.

  2. 6.     Roast for 5 minutes. Take out and turn the nuts over with a spatula. Put back in the oven for another 3-5 minutes.

Tip

Watch the nuts while cooking. Depending on your oven, you might need to turn them and get them out faster before the sauce caramelises.

  • I made these for xmas hampers

    I made these for xmas hampers and they are divine! I ended up cooking for twice as long to get them really caramelised.

    My husband and my dad smelt them cooking which meant I had to make a second batch, I don't like spicy food but even I ate these  tmrc_emoticons.)
