Crunchy Carrot salad

  • ½ orange, zest only, no white pith
  • 6 sprigs fresh italian parsley
  • 30 g freshly squeezed orange juice (approx. 1 orange)
  • 450 g carrots (approx. 4), peeled and cut into thirds
  • 250 g green apple, cut into quarters and core removed
  • 2 celery stalks (approx 120 g), cut into halves
  • 1 pinch sea salt (optional)
  • 60 g walnuts (optional)
  • 1 tbsp olive oil (optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place orange zest into mixing bowl and grate 10 sec/speed 9. Scrape down sides of mixing bowl with spatula, then repeat grating 10 sec/speed 9, until a fine consistency is achieved. Scrape down sides of mixing bowl with spatula.

  2. Add parsley and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.

  3. Add remaining ingredients, except walnuts and oil, and chop 4 sec/speed 5 or until desired consistency is achieved.

  4. Put into large serving dish and sprinkle with walnuts (optional) and drizzle with oil (optional). Serve immediately.

    Just needed a bit more 'kick' in it - corriander, sultanas, walnuts, a mixtures of seeds were good to add in.

    I just made this on a hot summer day. It is refreshing. Thanks,

    I added a a couple of tablespoons of pepitas and sunflower seeds. I may try a little more orange juice and/or a small amount of red onion next time to give it a bit of a kick.

    Made this salad tonight. Didn't have any parsley so added broccoli, pecans, sunflower seeds, pepitas and sultanas. Very very yummy!! May add some chickpeas to the leftovers for tomorrow's lunch. Will definitely be making again.
