  • 2 cups --- quinoa
  • 500gm pumpkin
  • 2 small Zuchinnis
  • 1/4 cup pine nuts
  • 1 bunch Continental Parsley

  • 1 lemon- juice only

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. 1. put a piece of baking paper in the bottom of your steaming basket- add your quinoa. Fill your TM bowl to 1- 1.5- then cook 20min temp varoma, speed 4

    2. peel your pumpkin and cut into small pieces, cut zuchinni into small pieaces- place onto a lined oven tray- drizzle oil of your choice over, add salt - bake in a 180 degree oven for 30 mins or until tender.

    3. Add veggies and quinoa to a seperate salad bowl.

    4. add parsley- chop speed 7 2 seconds- add to the salad bowl

    5. Add the 1/4 cup pine nuts- you can toast these in your oven if you prefer

    6. Add all the ingredients to your TM bowl- mix speed 7, 5 seconds

    7. Add dressing to your salad and stir through- serve immediately
