  • 25 grams raw sugar
  • 500 grams ripe tomatoes chopped into 2 cm pieces, (frozen overnight)
  • 10 dashes Tobasco
  • 1 pinch celery salt
  • 1 lime, (zest and juice)
  • 25-50 grams vodka, (according to taste)
  • 1 egg white
  • Salt and Freshly Ground Black Pepper

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Blitz the sugar 10 seconds/speed 10.

     

    Add frozen tomatoes, tobasco, celery salt, lime zest and juice, vodka, salt and pepper and blend for 1 min 30/speed 10, stirring with a spatula to keep this moving.

     

    Insert the butterfly whisk and the egg white and whip 45 seconds/speed 4.

Tip

Serve in shot glasses as a refreshing amuse bouche, or as a slushy Bloody Mary for brunch on a hot day (add sparkling water and more vodka).
