Ingredients

Thai Red Curry Dumpling Soup

  • 1 tbsp olive oil
  • 1 onion cut into quarters
  • 15g fresh ginger thinly sliced
  • 3 garlic cloves
  • 80g Thai red curry paste homemade, OR store-bought
  • 1200g water
  • 1 tbsp chicken stock paste, OR low sodium liquid stock
  • 400g 1 can coconut milk
  • 2 - 3 tsp fish sauce
  • 1 tbsp light soy sauce
  • 1 tsp brown sugar
  • 120g broccolini, small bunch, roughly chopped
  • 2 carrots, peeled and julinned
  • 80g Fresh Baby Spinach, OR bok choy chopped
  • handfull corianer leaves chopped for garnish
  • chopped shallots for garnish
  • sesame oil to drizzle over the soup at servings
  • lemon or lime wedges
  • 20 dumplings, homemade or store bought, fresh or frozen

Recipe's preparation

  1. 1. Add olive oil, onion, ginger & garlic into the mixing bowl and Chop 3 sec / speed 8, scrape around the mixing bowl then Saute 3 min / 120c / speed 1.
  2. 2. Add Thai red curry paste into the mixing bowl and Saute 2 min / 120c / speed 1. Scrape around the mixing bowl.
  3. 3. Place the dumplings into the varoma deep dish and tray, cover with lid and set aside.
  4. 4. Add water, chicken stock paste or low sodium liquid stock, coconut milk, fish sauce, light soy sauce & brown sugar into the mixing bowl. Place the varoma with dumplings inside in position ontop of the lid and Cook 13 min / 120c /varoma temp / speed 1.
  5. 5. Remove Varoma and set aside.
  6. 6. Add carrots & broccolini into the mixing bowl and Cook 5 min / 100c / speed 1.
  7. 7. Add baby spinach or bok choy into the mixing bowl and stir in with a spatula until wilted.
  8. 8. Taste test and adjust the seasoning if needed and stir in with a spatula.
    Empty the soup into the thermoserver, add the steamed dumplings and stir gently to combine or you can put the dumplings strait into the serving bowls and pour the soup over the top.
  9. 9. Serve the soup topped with chopped coriander and/or cjopped shallots, drizzle of sesame oil and a squise of lemon or lime juice.

Tip

This recipe was written for TM7 but if you are using a TM6 or TM5 please place the simmering basket ontop of the lid in steps 2 & 5.

I make my own Thai red curry paste which is at medium heat but if you use a store bought one please follow the instructions on the lable for qty usage.
