Ingredients

  • 1 Thick Sliced Bread, Ciabatta or sour dough
  • 4 Roma tomatoes, Chopped roughly
  • 2 cloves garlic fresh, Roasted and puréed
  • 1 small red onion, Chopped
  • 2 heaped tablespoons basil leaves, fresh
  • salt and freshly ground pepper, To taste
  • 1 level tablespoon balsamic vinegar
  • 3 level tablespoon extra virgin olive oil

Recipe's preparation

    Bruschetta
  1. Slice bread thickly and baste both sides with olive oil. In TM bowl combine tomatoes, onion basil vinegar, seasonings and 1 tablespoon of oil with 2-3 quick turbo bursts. Pour into bowl. Grill bread slices on both sides in a grill pan to get nice grill lines or even in an electric panini cooker. Spread a thin layer of the puréed roasted garlic over each slice then top with tomato mix which should be chunky.drizzle a little olive oil on top of the tomatoes and serve.

    Delicious! I used a balsamic glaze with sourdough and it was to die for. Best bruschetta I've had in a long time. Definitely making this again.

    I might have a tinker and see about trying to make it more chunky, as it came out like a paste or sauce (or maybe my Romas were too small).
