Ingredients

Hoisin Dipping Sauce

  • 85 grams Peanut Butter, smooth or crunchy - it's your choice
  • 15 grams soy sauce, (GF : use Tamari)
  • 30 grams hoisin sauce
  • 1 teaspoon ginger, grated
  • 100 grams water, hot, to help thin sauce to desired consistency

Nuoc Cham Dipping Sauce

  • 40 grams water
  • 40 gram fish sauce
  • 30 grams lime juice
  • 40 grams sugar, caster

Rice Paper Roll + Filling

  • 12 pieces Rice Paper
  • meat of choice, cooked chicken, prawns or bbq pork
  • 1 avocado
  • carrot, grated
  • cabbage, red, finely sliced
  • cucumber, sliced long
  • herbs of choice, mint, thai basil, coriander

    Peanut Hoisin Dipping Sauce
  1. in bowl combine the sauce ingredients, then mix 30 sec/speed 3. Transfer to a bowl and set aside.
  2. Nuoc Cham Dipping Sauce
  3. in bowl combine the sauce ingredients, then mix 30 sec/speed 3. Transfer to a bowl and set aside.
  4. Assembly of Rice Paper Roll
  5. Take a rice paper wrapper and completely submerge it in hot tap water for 10 to 15 seconds, or until pliable.

    Then place the rice paper wrapper on a plate or cutting board and top with meat and salad toppings of choice.

    Fold the bottom half of the wrapper over the filling, hold the fold in place, tuck in the sides and roll tightly and carefully.

    Repeat with the remaining filling and serve with the dipping sauces.

Tip

I have always loved the fresh Vietnamese-style Summer Rolls filled with Chicken or Prawns or BBQ Pork, with avocado, and salad of carrot, red cabbage, cucumber, bean shoots, snow peas, capsicum, a little mint (but I skip the Coriander) and then add a delicious dipping sauce - I really enjoy a Peanut Hoisin Sauce or Nuoc Cham tmrc_emoticons.) .

Shortcut : use undressed coleslaw mix

Bulk It Up: add some cooked vermicelli noodles.

Rice Paper Wrappers can be found in the Asian section of regular supermarkets or any Asian grocery store. They are circular and hard but soften and become pliable when added to water.
