Corn and Feta Fritters
- 120 grams plain flour
- 2 eggs
- 1/3 cup Milk
- 3 corn cobs, kernels only
- 100 grams feta cheese
- Olive Oil and Butter for frying

Recipe's preparation
- Mix eggs and milk speed 4/3 secondsAdd flour, mixing until well combined Add corn and fetta. Speed 4/ 10 seconds Heat a large frying pan with oil or butter Drop 1/4 cupfuls of mixture into the pan. Cook for about 2-3 mins, until golden brown underneath, then turn and cook the other side. Repeat with the butter and fritter mixture.

Tip

These were a hit. Made with gluten free flour for our guests. I hadn't made corn fritters before and was surprised how well they stuck together and flipped beautifully. Served as suggested with avocado, rocket and sweet chilli sauce. Will make again!

Lovely and easy. I added spinach, spring onions, parsley (chop at the start) and used the oil from feta to cook them. Added a heap of salt and pepper too!
Might try with some SR Flour next time for them to be little fluffier.

Such an easy, quick and versatile recipe, thank you!! I added capsicum and shaved carrot to one batch and to the other I added mushroom! I will also double the batch next time around but these were great!

one of the first 'fritter' recipes ive cooked that actually cook properly! so many ive tried that they dont cook properly in the middle. these were delicious! everyone in my family loved them & we will always come back to this recipe - thank you!!

I used 1/2 Spelt and 1/2
I used 1/2 Spelt and 1/2 coconut flour- needs a bit more fluid if you use coconut flour. Popped in some cold precooked chicken. Very tasty and quick!

Quick and easy to make when you don't know what to cook! For my tweaks I added 1 carrot, 1/4 of a red onion, a clove of garlic and as I didn't have fresh corn, I used canned instead. very tasty.
