- Momo Sauce/ Momo Chutney
- 2 cups All-purpose flour (Maida)
- 1 cup water
- 400g Minced chicken
- 2 small Onions
- 2 Green chillies
- 1 small Ginger
- 3 garlic cloves
- A handful of Coriander leaves
- ½ tsp of Black pepper
- 1 tsp of Soy sauce
- Salt as per taste
Mix the flour and salt in a bowl and add enough water to make sure it turns into a stiff dough. Knead the dough till its smooth and cover with a damp cloth so the dough doesn’t dry.
Utilise a food processor to finely chop the green chillies, ginger, garlic and onions. In a bowl, mix the minced chicken and the chopped vegetables together. Then add pepper, salt and the soy sauce.
Keep the filling in the refrigerator for an hour to ensure the flavours come together.
For the momo wrapper, separate the dough into small lemon sizes and roll out the dough into small thin circles. However, the circles shouldn’t be so thin that they are translucent. Place a tablespoon of the filling into the centre of the momo wrapper. Pich the edge of the momo wrapper towards the centre. Now fold the edge together and make small pleats. Pinch the pleats together to seal the momo. Fill a vessel or pot that is sufficiently enormous to put the steamer with 3″ to 4″ of water and heat water to the point of boiling. Guarantee that the base of the steamer doesn’t contact the water.
When the water starts to boil, place the steamer in the vessel and cover with a top. Steam on high flame for 10 mins. The momos are done when a glossy sheen shows up over them.
