Prawn orange and fennel salad

Ingredients

  • 1/2 red chilli, deseeded if preferred
  • 1 garlic clove
  • 50 g extra virgin olive oil
  • 40 g freshly squeezed lemon juice
  • sea salt, to taste
  • Freshly ground black pepper, to taste
  • 16 cooked prawns, tails left on
  • 1 fennel bulb, white part only, roughly chopped
  • 1 1/2 oranges, peeled, segmented

Recipe's preparation

  1. Place chilli and garlic into mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl.

  2. Add 30 g of the oil, 20 g of the lemon juice, salt and pepper and mix 10 sec/speed 4. Pour over prawns and set aside.

  3. Without washing mixing bowl, add fennel, remaining oil and remaining lemon juice and chop 5 sec/speed 4.

  4. To assemble, place fennel mixture onto a serving plate topped with orange segments. Pour over reserved prawns and marinade and serve.
