Feijoa Muffins
- 300 g white sugar
- 225 g Olive Oil or Melted Butter
- 2 eggs
- 15 g vanilla extract or essence
- 360 g Self Raising Flour
- 2 pinches salt
- 1 level tsp baking soda
- 1 level tsp ground cinnamon
- 550 g Ripe feijoas, About 3 cups

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat the oven to 175 degrees
Line a 12 large Muffin tin with muffin liners, or grease well with oil, or cooking spray
Scoop the Feijoa flesh out of ripe or overripe Feijoas into bowl. blend for 3 second, speed 5. Transfer into a bowl and set aside.
No need to rince bowl. Add the sugar and oil (or butter) blend for 3 minutes speed 5, until smooth and creamy.
Add the eggs and vanilla blend 2 minutes, speed 5
Add Flour, Salt, Baking Soda, Cinnamon and blend 10 seconds at speed 4, mix until just combined
Transfer the mixture into a large mixing bowl. Add the lightly mashed Feijoa and stir well, this is a very thick mixture.
Spoon the mixture into the muffin tins to 3/4
Sprinkle with brown sugar over the tops of the muffins, approximately 1 teaspoon per muffin
Bake for 18-23 minutes until the muffins are golden brown and a skewer comes out clean.
Remove from the oven and allow to cool for 5 minutes then transfer the muffins to a tray to cool. These are delicious warm from the oven!
