(variant) Wholemeal Banana, Honey &Date Muffins

Ingredients

12 portion(s)

  • 100 gram pitted dates
  • 2 ripe bananas
  • 100 gram coconut oil
  • 2 eggs
  • 85 gram apple cinnamon puree
  • 1 teaspoon bi-carb soda
  • 1 teaspoon vanilla pod, (ground pods/extract/paste)
  • 240 gram wholemeal self-raising flour
  • 20 grams honey

Recipe's preparation

    Banana Date Muffins
  1. Preheat oven to 170 C

  2. Grease silicone cupcake moulds with cooking spray and place on baking tray.

     

  3. Place dates into mixing bowl and chop 10 sec/speed 9

     

  4. Add banana and chop 5 sec/speed 7

  5. Add oil, apple puree, honey and eggs and mix 3 sec/speed 5

  6. Add bi-carb, vanilla and flour and mix 10 sec/speed 6

  7. Bake for 20 - 25 minutes in the oven.

    Remove from the oven and cool on a wire rack. These muffins can be frozen until future use.

    Great recipe tmrc_emoticons.) My toddler land I loved these. I didn't realise we'd run out of fruit purée when I started making these. I added an extra banana and a tsp of cinnamon instead. We'll be adding some cream cheese icing to them as a little birthday treat tonight!

    Apple/banana/coconut muffins.....made these to use up bananas, didn't use apple cinnamon purée, instead added a whole apple any some cinnamon to step 4. Very nice, good change from usual banana bread/muffins
