Fresh Tomato Pasta Sauce

Ingredients

Sauce

  • 1 bunch Mixed Herbs, Parsley, Oregano, Basil
  • 4 cloves garlic
  • 1 Large Brown Onion, quartered
  • 1 Large carrot, chunks, unpeeled
  • 1 large zucchini, chunks, unpeeled
  • 1 red capsicum, chunks, deseeded
  • 800 grams chopped tomatoes, fresh
  • 400 grams water
  • 75 grams olive oil
  • 50 grams tomato paste
  • 1 tablespoon sugar raw
  • 2 heaped teaspoons salt
  • 1 heaped teaspoon TM veggie stock concentrate
  • 2 teaspoon white / black pepper

Recipe's preparation

    Sauce
  1.  

    Place zucchini, capsicum and carrot into TM bowl. Chop 10-15 sec on speed 6. Set aside.

  2.  

    Place fresh tomatoes into TM bowl. Chop 10-15 sec on speed 6. Set aside. Skip this step if youre using tinned tomatoes.

  3.  

    Place fresh garlic, herbs and onions into TM bowl. Chop 5 sec on speed 6. Add oil and saute for 5 mins, 100deg, speed 2.

  4.  

    Add all other ingredients and reserved vegetables. Cook 30 mins, Varoma , If it's "spitting" too much, turn to 100deg for a few minutes til settled.

  5.  

    Pour half the sauce into a clean jug and set aside. Blits sauce on speed 5, slowly stepping up to speed 9, for 10-15 secs. Pour into a sterilised jar. Pour the other half of the mixture into the TMX, and repeat the process.

Tip

Cook a little longer to make thicker or if you wish to make tomato paste.

    So flavoursome, fresh and easy to adapt.. Made 2 batches as had a heap of tomatoes to use

    in both I subbed zucchini with celery and used dried herbs as it's what I had on hand, also used 1kg of tomato and about 100g of water

    Batch 1 I added a stack of chilli and made a spicy ravioli sauce

    Batch 2 I also added about 400g of mixed frozen veg and made hidden veg pasta sauce for my daughter - made 10 toddler size individual serves - which I've frozen and just cook up some pasta for busy nights or times I know she won't eat what we have. she loves it!

    Love this pasta sauce and my 9 year old daughter loves it too. I've had a huge amount of tomatoes to make use of so each weekend I've been doing up another batch or two of sauce. I've also frozen some in zip lock bags. A wonderful recipe and I love the hidden veggies. I tend to not worry about blitzing it at the end!!!

    Thank you for the recipe. It’s was lovely. Flavour wasn’t intense but I had it with home made pasta so it complemented perfectly. I did slightly modify the recipe. I didn’t add the water as I used tin tomatoes. I added only a pinch of salt and I also added mushrooms. I Will be making this again.

    This was a great base for preserving my 10kg glut of tomatoes. I did the following variations:

    Variation 1: Red wine and garlic

    Veggies I used were Zuccini, celery, carrot and red cap. I used continental pastley, basil, thyme, oragano as my herbs and I was very generous with the amount I used. I also used 1kg of tomatoes per batch.

    I added about 8 cloves to the onion mix. Saute as instructed above.

    Add 200mls of red wine to the onion saute mixture and saute for another 5 minutes. Then follow the rest of the receipe as above.


    Variation 2: Tomato and Chilli

    Veggies I used were Zuccini, celery, carrot and sweet baby caps. I used continental pastley, basil, thyme, oragano as my herbs. I also used 1kg of tomatoes per batch.

    I added about 1 teaspoon of hot dried chillis and 1-2 teaspoon of balsamic vinegar to the onion saute mixture and saute for another 5 minutes.

    Follow the rest of the receipe as above.


    To preserve this using the boiling method of canning:

    I boiled the jars for about 10 minutes before the sauce was ready.

    I added about a teaspoon of lemon juice to each Bells preserving jar before filling it with about a half inch head left.

    Wipe down the rim, seal with fresh (sterilsed with jars for 5 min) lid and ring.

    Return to hot water and boil for 15 minutes. Let cool naturally on counter for 24 hours - do not touch them before 24 hours to ensure a good seal. Discard or use immediately if any have not sealed after that time.

    Will keep in the cupboard for about 12 months.

    Fantastic!

    This is really a great tasty sauce... i freeze it in 3 batches and use it in my bolognese when we have it.
    I use 120grams of water and cooked for 35mins varoma sp2.5 with basket in replace of MC.

    Very nice, thank you.  I only added 250g of water, otherwise it would have exceeded the max capacity of the bowl.  Also added more veg stock and less salt and pepper.  I used the simmering basket to stop the splatters from escaping.  And I pureed the first batch, but liked the look of the sauce before pureeing so didn't puree the second batch.
