Fruity Raw Cheesecake

Ingredients

  • Base:
  • 250 g macadamia nuts
  • 100 g dates
  • 45 g desiccated coconut
  • Filling:
  • 400 g cashews soaked for at least 1 hour then drained
  • juice and pulp of 2 large lemons
  • 50 g Agave nectar or Maple syrup
  • 120 gcoconut oil
  • 1 tsp vanilla bean, extract
  • Pinch sea salt
  • 100 g water
  • 1-2 punnets fresh strawberries or 150 g frozen berries
  • or flesh of 2 mango, es or 150 g frozen cheeks

Recipe's preparation

  1. Place all base ingredients into TM bowl and blend for 30-40 seconds on speed 6 until well combined and forming a moist dough. Press into 20cm spring form cake tin and place in freezer.

    Place all filling ingredients into TM bowl and blend together until smooth and creamy for 1 minute on speed 7.

    Pour on top of base and set in the freezer over night.

    Remove from cake tin and decorate with additional fruit and nuts of choice. Allow cheesecake to sit for 30 minutes in fridge prior to serving to soften slightly.

    Tasted great! I could only get dried dates & they worked just fine.

    I made this for the gluten/dairy free aspect, so has anyone tried baking the base? When I took it out of the freezer the base wilted quite quickly but the filling stayed frozen. Was still a huge hit at the party for both the people with food intolerances & everyone else.

    Firstly coconut oil is a medium chain fat not a long chain so it is healthy. There is new research regarding agave syrup that it is no better for you than sugar as it is highly processed from the root of the plant. Real agave as made by the Mexicans is extracted from the leaf and has a very strong taste which is not like by many people. If you wish to use a natural sweetener use the maple syrup, dates or coconut sugar which is low gi.

    what a fabulous recipe. hubby is intolerant to fructose so i made these purely lime flavoured and without the base. they are amazing! Just had some for a guilt free yet super decadent breakfast. I definitely recommend this recipe!

    Hi Lauren, cashews help to give the creamy consistency of a cheesecake. You can substitute others nuts but we'd recommend pre soaking them in some warm water to help soften them. They may need a little extra blending too. Let us know how you go!

    I make lots of gluten free items, but I'm afraid I use lots of nuts!  However, Thermoblitz posted this recipe on her Facebook page 6 weeks or so ago - so I'd suggest trying sunflower seeds instead!  Cheers, Lesley at https://www.facebook.com/MeAndMyThermie?ref=tn_tnmn

    NUT FREE Raw Chocolate Shortbread by Thermoblitz Shortbread Crust Ingredients 130 gram Sunflower Seeds ( you could even use Pumpkin Seeds or a combo of both - although I have only made with sunflower seeds at this point) 60 gram Dried Unsweeted Coconut (Or use Shredded Coconut) 75 gram dates 1/4 teaspoon sea salt 1 tblspn Maple Syrup Shortbread Base Method Put all shortbread ingredients in tmx bowl.1 minute speed 5 Stop at 30 secs and check. Pour shortbread mix into lined tray and press down. Put in Freezer ( I used a square cake tray 22cm x 24cm ) Chocolate Topping Ingredients 130 gram Sunflower Seeds ( you could even use Pumpkin Seeds or a combo of both - although I have only made with sunflower seeds at this point) 60 gram organic coconut oil 90 gram Pure Maple Syrup Or Raw Honey - I made this with Honey and the ratio of honey was different so its 150g of Honey - Honey totally changes the flavour of this dish 55 gram lemon juice 3 tablespoon raw cacao powder OR use A very good Organic CACAO 1 teaspoon Pure Vanilla extract or vanilla bean paste 1 tablespoon water 1/8 teaspoon sea salt Chocolate Topping Method Put all chocolate mixture ingredients into Bowl 2mins 30 secs on Speed 5 Check and scrape down and off the lid! Continue on for another 2 to 3 mins Speed 5 until smooth Consistency Pour chocolate mix on shortbread mix and spread with spoon. Put in freezer Wait at least a couple of hours Slice up and Keep in the Freezer. Take out as needed and eat straight from freezer or let sit out for 10 minutes before eating. NOTE: I used Honey in Topping , I personally prefer Maple Syrup, the rest of the family LOVED This nut free version I made yesterday as it has a totally different taste to the Nut Version NOTE: I would Blitz the Sunflower Seeds first before added the other ingredients to help make the mix smoother Give it say 20-30 secs on speed 5

    Just so everyone who's asking about how this is a cheesecake without egg ect ect, if you READ the title it is a RAW cheesecake, meaning no cooking or any form of living/once living product is used. Most vegans make RAW food because it suits to their dietary lifestyle.

    Sure this might be delicious, but there is no cheese in the recipe so how can it be a cheese cake? Also coconut oil is one of the only saturated vegetable oils so not too healthy. But I've not tried the recipe so perhaps I'll eat my words?

    easy to make. No one in my family particularly liked it. Very strong coconut flavour. Filling tasted like frozen yoghurt. Base nice but not crunchy which is how I like my cheesecake.

I was surprised how delicious and creamy it turned out, I also was relieved I could get it out of the 20cm container in one piece as I used a silicone cake mould. Have had requests to make it again for a family function this weekend!

    I didn't add the 100ml of water to the recipe (forgot!) but it still turned out great as I did have the cashews soaking for 4+ hours. 

    Highly recommend this cake!
