Raspberry Sorbet with Coconut Ice

Coconut Ice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place milk and sugars in mixing bowl.  Bring up to a boil, 110 degrees for 2-3 minutes, speed 1, then reduce temperature to 95 degrees for a further 3 minutes.  Add coconut and mix 5seconds, speed 3.  Then pour into shallow dish and leave to cool in fridge or freezer. Once cold, use a fork to scrape up bits of coconut ice. It should look like crumble or coarse bread crumbs. 

     

    To make the sorbet, blitz the raw sugar and orange peel for 6-8 seconds, speed 10.  Add the frozen fruit and juice and blend for 45 seconds on speed 6.  Serve immediately with coconut ice or freeze for later.
