- 500 g shredded chicken, (Thermofun recipe)
- 1 onion
- 1 teaspoon cumin seeds
- 2 red chillis, fresh
- 3 cloves garlic
- 2 cans diced tomatoes
- 1 can red kidney beans
- 1 can Refried beans
- 150 g Cheddar cheese
- 1-2 Avocados, Sliced
- 1 package tortillas

Recipe's preparation
Preheat oven to 180c
1. Prepare shredded chicken as per Thermofun's recipe (//thermofun.com/thermofun-everyday-basics-shredded-chicken/). This can be done in advance.
2. Cut cheese into 2cm cubes and place into bowl and grate for 7sec/speed 7. Set aside.
3. Place chillis, cumin seeds into bowl and chop 8 sec/ speed 9.
4. Add the onion and garlic, chop 6 sec/ speed 5.
5. Add the two tins of diced tomatoes and cook 15mins/100c/speed 2.
6. Add the can of red kidney beans and refried beans and cook for 5mins/100c/speed 1 "Counter-clockwise operation" Use Spatula to incorporate if required.
7. Pour a quarter the sauce into the oven dish.
8. Put half the cheese and all of the shredded chicken into a bowl and combine with a quarter of the sauce.
10. Prepare enchiladas by placing the chicken/cheese/sauce mixture and place some sliced avocado on top. Wrap the tortilla and lay ontop of the sauce in the baking dish. Continue this until all 10 tortillas are placed in the baking dish.
11. Pour the remaining sauce over the top of the tortillas and sprinkle with the reamining cheese.
12. Cook in the oven for approx 12 mins or until cheese is melted.
13. Serve with a mexican rice, cous cous, salad and or sour cream.

This is delicious thank you. I doubled the recipe but only added one tin of kidney beans and it just fit I also added a generous shake of Mexican Chilli seasoning at the start with the chillies and it has given it decent heat! Go perfectly wth the Tequila Margarita Sorbet!!

These are soooo yummy! I added taco seasoning tithe chicken before coming. I also made herb and garlic tortillas. Both these added just a bit more flavour, and the family loved them. Thanks for sharing the recipe

This was delish! Next time I'll need to be prepared & make the chicken ahead of time so its not too long for a week night dinner. Loved the flavour though & my husband & daughter demolished it.

Quite nice. Like others, I made this faster by using left over BBQ chicken. I didn't have quite enough of it so I bulked it out with tinned corn and mushrooms. I also used wholemeal tortillas to increase the fibre. I found the sauce very bland though (I think its all the beans) so I doubled the cumin and when that wasn't enough I added some tomato paste and most of a pack of taco seasoning mix, which gave it a lot more flavour. Will definitely make it this way again, but will only use half a tin of retfried beans and swap the kidney beans for baked beans as others here have done.

I added corn, baby spinach, shallots and mushroom to my shredded chicken mixture to up the veg content.
I also skipped the kidney beans in the sauce and used the refried beans only and added a spoon of sugar to balance the flavours.
Yum yum yum! I highly recommend others try this dish!

This recipe is a ripper! I decided to leave out both beans and I replaced with a can of rinsed brown lentils. My whole family enjoyed it Including 2 children.

made these the other night and they were delicious!! i ommitted the beans as im not keen on them.
next time i will put less sauce on the bottom and space them better as they were soggy on the bottom.
hubby and i also both said that the filling mixture would be yummy mixed through some pasta.

Tried this for dinner tonight. I didnt add avocado or sour cream or refined beans. The dinner was well above what I expected, so it will now be on my weekly or fortnightly dinner list. Thank you love it

Made this using leftover BBQ
Made this using leftover BBQ chicken, the sauce is delicious and will become a favourite in this household. I didn't add avocados as they are way too expensive at the moment, and it was fine without them. I did notice that garlic cloves are on the ingredient list but not in the recipe preparation, I added them with the chillis.
