Coconut Chicken and Broccoli

Ingredients

Spice Mix

  • 1 1/12 level teaspoons kosher salt, Spice Mix
  • 1 1/2 level teaspoons garam masala, Spice Mix
  • 1 1/2 level teaspoons coriander seed, ground, Spice Mix
  • 1/2 level teaspoons cumin seed, ground, Spice Mix
  • 1/2 level teaspoons fennel powder, Or more Garam masala for spice Mix

Main Dish

  • 3 level tbsp
  • 3 star anise
  • 1 sticks cinnamon
  • 1 onion, Large
  • 500 grams chicken thigh fillets, cut into small 1cm / 1/3" slices
  • 1 level teaspoons garlic, finely grated
  • 1 level teaspoons ginger, finely grated
  • 3 level teaspoons turmeric (or 1 1/2 tsp turmeric powder)
  • 1/2 litre low-sodium chicken stock/broth
  • 400 grams unsweetened coconut cream (or coconut milk)
  • 1 large head broccoli, florets cut small (including stem if peeled & diced)
  • 1 1 cup coriander/cilantro leaves, lightly packed (optional)
  • crispy fried onion, To garnish

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Instructions
  1. 1. SPICE - Place all ingredients for spice mix into thermomix and blend for 5 secs on speed 3 until combined. (Place into bowl) Salt, Garam Masala, Coriander seed, Cumin seed, Fennel Powder.

    2. Add onion and chop until finely diced speed 3.5 for 4 secs. Place into separate bowl.

    3. Chop Chicken – Speed 4 for 5 secs, place into bowl.

    4. Place oil into thermomix, add star anise and cinnamon stick. Temp to varoma 2 mins.

    5. Add finely diced onion and cook for further 2 mins- Speed 1 check and cook further until onion is soft.

    6. Add sliced chicken and cook for further 3 mins on speed 1. Cook until Chicken is cooked through.

    7. Add Garlic, ginger and tumeric. Cook for 1 minute speed 1.

    8. Add SPICE MIX – StirGentle stir setting for 30 secs

    9. Mix all ingredients for 2 mins Speed 1

    10. Add Chicken Stock and coconut cream (Coconut milk). Stir for 1 min

    11. Bring Mix to Simmer 100c for 12 mins at speed 1, allowing sauce to thicken slightly.

    12. Add Broccoli florets and simmer further 3 mins at speed 1 or until soft.

    13. Allow dish to sit for 3 mins to thicken.

    14. Stir in coriander leaves if desired.

    15. Serve with rice and garnish with crispy friend onions.
