Parmesan & Avocado stuffed chicken breast

Ingredients

Ingredients needed

  • 30 grams parmesan cubed
  • 30 grams tasty cheese, cubed
  • 250 grams sweet potato cubed
  • 250 grams pumpkin cubed
  • 2-4 chicken breast, whole
  • 1 avocado
  • 1 carrot, peeled with a peeler tagliatelle style
  • 1 zuchinni, peeled with a peeler tagliatelle style
  • 2-4 stalk Brocollini
  • 20 grams Milk
  • --- Salt and Pepper to tasts
  • 800 grams water

Recipe's preparation

    Recipe Preparation
  1. 1.

    Place Parmesan and Tasty cheese into bowl and grate 5secs/sp8.

    Set aside

  2. 2.

    Place sweet potato and pumpkin into TM basket and place into bowl, add water. Place lid on and Varoma into place.

  3. 3.

    Prep chicken breasts by making a slice down the side to form a pocket. Fill pocket with desired amount of avocado and grated cheeses. Skewer closed if needed

    Place onto varoma tray and sprinkle with S&P to taste.

    Cook for 20-25mins/Varoma/Sp3

  4. 4.

    Add Carrot, zuchinni and brocollini into Varoma basket season to taste with S&P and cook for a further 5mins/Varoma/sp3 

  5. 5.

    Set Varoma aside.

    Remove basket from the bowl and empty water out. Empty sweet potato and pumpkin back into bowl. Add milk and blend for 20secs/sp4 or until desired texture for mash.

  6. 6.

    Plate, serve and enjoy.

Tip

This is lovely served with either a mushroom sauce, bernaise sauce or hollandaise sauce.

You can add extra vegies if wanting a bigger meal.

Sweet potato or pumpkin can be replaced for potato.

You can stuff the chicken breasts with any filling you may have eg: ham and cheese, sundried tomato and feta etc.

    Beautifully moist chicken. I would suggest trying to use matching size chicken breast pieces if possible. I had one which was much thicker and took a lot longer to cook. Another time I would trim it down to be closer in size to the others. The avocado cheese mix could do with a bit more flavour. Will put it on rotation thanks.

    Made this for dinner last night, it was amazing. We will certainly be having this again. The left over vegetables were blitzed and added to a sausage roll mix today, they turned out to be the best we have made.

    This was so delicious and quite easy to do. I stuffed mine with shredded ham and cheese and only made 2 chicken breasts. I had leftover cheese which I added to the potato when blending with the milk and it turned out great. I also added a sprig of rosemary and a sage leaf to the top of each breast while they were steaming and removed before serving. It gave the chicken a lovely flavour. Served this dish with some leftover creamy mushroom sauce.

    This was easy and delicious! My first meal using the varoma and was a success. I used a ham, cheese and sundried tomato stuffing with a mustard sauce along with the vegetables. Great all in one meal. Thanks for sharing   tmrc_emoticons.)

    This was a lovely simple tasty and healthy meal. I love cooking the whole meal in one go using the varoma. I used different vegies and did not make a sauce as the cheese and avocado stuffing was enough.

    Such a quick and tasty mid week meal the fam bam will love it. Options are endless when it comes to the stuffings will change to suit pantry and fridge as the month goes on. Cant go past a bit of varoma chook breast with vegies. A little bit schmacy 3 meat and vege tmrc_emoticons.)

    I cooked the chicken (2 breasts) for 25mins - next time I will only do 20mins. As a result I only needed to do the mash for 8secs.

    I will also experiment with how I prepare the avocado.

    I didn't use all the cheese in the stuffing so also put it on top of the mash.
