Red Thai Chicken Curry with noodles

  • 100 g TM red Thai curry paste
  • 400 g canned coconut milk
  • 1 tablespoon cornflour
  • 3 Kaffir lime leaves
  • 500 g skinless chicken thigh fillets, cut into slices
  • 30 g Palm sugar or brown sugar
  • 2 tablespoon fish sauce
  • 100 g frozen peas
  • 100-100 g broccoli, cut into florets
  • 20 Fresh Thai basil leaves
  • 420 g Fresh Egg Noodles
  • Fresh Corriander to taste
  • Fried tofu, optional

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place Fresh egg noodles, Broccoli and frozen peas into Thermoserver with boiling water

    2. Place red Thai curry paste and 60g of Coconut cream and 40g water into mixing bowl and cook 2mins/Varoma/speed 1

    3. Add remaining Coconut cream and 50g water, cornflour and Kaffir lime leaves and cook 6 min/100C/Counter-clockwise operation/speed Gentle stir setting

    4. Add Chicken and cook 8-10 min/100C/Counter-clockwise operation/speed Gentle stir setting

    5. Add palm sugar or brown sugar and fish sauce and cook 2 min/Varoma/Counter-clockwise operation/speed Gentle stir setting

    6. Add Thai basil leaves and cook 1 min/Varoma/Counter-clockwise operation/speed Gentle stir setting.

    Carefully remove Kaffir lime leaves from mixing bowl and discard.

    7. Drain bowling water from Thermoserve and combine Noddles and Curry.

    8. Garnish to taste with Corriander and thinly sliced red chilli

    Optional - Add fried tofu to soak up all the juices.

    Enjoy

    This was delicious. Only changes were 1 1/4 tbls of fish sauce and added snow peas, potatoes and carrots. It's one of those great recipes that you can add any type of veggies. Thanks for posting, this will be going in to my favourites folder.

    Really yummy. Made a few small adjustments - cooked noodles seperately and added brocolli and peas after cooking chicken - also through some zuccini in too.
    Didnt have any kaffir lime leaves and used coconut milk.

    Definitely a make again meal! I used Valcom shredded kaffir lime leaves (about a Tbsp) which means you just leave them in the curry. I also added a heaped Tbsp of cornflour to make the sauce slightly thicker.

    Absolutely amazing & devoured by all including my 11 year old. Was spicy and full of flavour. I cheated and used store bought curry paste. My noodles weren’t soggy as stated by others. Will definitely be making again!

    10/10 ... made it to the top of my Favourites list to eat/make.
    Made the recipe as listed (ingredients) ... BUT ... when the curry was cooked I put it in the Thermoserver then added the peas and broccoli and let sit for about 20 - 30mins.
    ALSO ... I cooked the noodles on the stove top, as instructed on the packet.
    Cooked up some Tofo as well - first attempt ever!
    I had eight guests and they ALL loved it too!
    PS: I used coconut cream - the description confused me a little so I went with the coconut cream (bad me!)

    Flavour was yum! the noodles went really soggy, clumped together and had to throw most of them out. i added buk choy and red capsicum. I recommend using a different type of noodle or use rice instead! overall yum recipe!

    Very nice! I put in extra veggies and only 10g of palm sugar, and 70g of store bought red curry paste so my toddler could eat it, was very nice. Might put some peanut butter in it next time for a Penang flavour and serve with lime and coriander

    Well what can I say. This would one of the best,ever with out the veggies. Just enough bite, but for those who want an extra kick, after you garnish with the coriander and chilli chop up a birdseye chilli and throw it on top.Can't wait to try this with some endeavour prawns instead of the chicken.

    Hmm... Not sure where I went wrong with the noodles, but they were terrible! Gluggy and over cooked. We threw them out tmrc_emoticons.-( I hate wasting food!

    The flavor of the curry was fantastic, but next time I'll probably try with rice or a different type of noodle, cooked according to the packet directions. 

    My daughter is vegetarian, so I removed some sauce before step 4, and fried some tofu for her. Weirdly, her sauce ended up much, much spicier than ours! Not sure how I'll do that next time - might have to have extra coconut milk to dilute hers down a little perhaps?

    This is so good! Loved it. I used snow peas instead of peas. We froze the leftovers and had it with rice and it was great too. Didn't have any Thai basil but it didn't even need it. Definitely recommend this recipe

    These are the modifications I did:

    I made it with rice instead of noodles.

    I also only used 30g of red Thai curry paste so my 3 year old could eat it. 

    I used light coconut milk instead of coconut cream

    I used 1kg chicken and the ratio was great

    I didn't have Thai basil so I just used fresh basil from the garden

    I didn't have Kaffir lime leaves so didnt use

    I added veggies after the chicken was cooked: peas, broccoli, kale. 

    I added the coriander and let it cook for 1 min to give it more flavour.

    This was very yum!  Followed other comments and put only 65g of Thai paste. Would probably go 75g next time. Didn't have fresh Thai basil leaves so didn't use. The Kaffir leaves had disintegratied by the end so couldn't take out. I have a TM 31 and had no problems. I used 1 kg of chicken as well.

    Delicious, the best curry recipe I've done in the themie. Chicken was cooked perfectly, and not shreddded at all. My two fussy little eaters gobbled this up as well. I also used less curry paste to lessen the heat for my kids. This will become a regular in our house.

    Thank you for this recipe, I made this tonight for dinner and my husband quite enjoyed it. My 4 year old however found it too spicy, even though I have reduced the curry paste to 65g. My only other suggestion would be that it to be served up with thin rice noodles rather than the fresh egg noodles to give it a better crunch. Otherwise, a delicious and quick recipe to whip up (even with a hungry 6month old baby in my arms during the cooking process!)

    Oh, and I just saw now that this recipe was intended for the TM5! I have a TM31, but it worked fine, as nowhere near full capacity, and even when added to the noodles/brocolli/peas in the original TM31 thermoserver, it still didn't overflow.

    This was YUMMY! And you were spot on with the time. I took exactly 30mins from start to finish. Just a note that your ingredient list states Coconut Milk but Method states Coconut Cream. I used Coconut Cream, so hope that was intended. As I was giving this to my 19 month old and 4 year old, I used a tad less curry paste (85g, but next time will go even less, maybe 60g). I bought a mild yellow curry paste. Instead of fried tofu, which I couldn't find, I added fried shallots, as I love the crunch (and taste) they give - just a sprinkle on each serve.
