Orande, lemon, coconut and almond cake
- 100 grams almonds
- zest of 1 orange and 1 lemon
- 150 grams raw sugar
- 130 grams butter at room temperature
- 120 grams self rasing flour
- 50 grams Shredded coconut
- 4 eggs
- 100 grams orange juice
- 100 grams lemon juice
- 220 grams Milk

Recipe's preparation
Preheat oven to 180 degrees c. Line base and sides of a 23 cm baking tin with baking paper
Place Almonds in bowl and mill 10 seconds on speed 9. Set aside
Peel zest from lemon and orange with a potato peeler and place in bowl with sugar and mill for 20 seconds on speed 9
Place all remaining ingredients including almonds in bowl mix for 30 seconds on speed 5
Pour into prepared tin and bake for approx 1 hour or until a skewer inserted into the center comes out clean. Cover with tin foil after 30 mins to stop browning too quickly
Cool for 5 mins before turning out of tin

I didn't have enough juice so topped it up with tropical juice I had in the fridge. I iced it with passion fruit icing. It is definitely a recipe I will make again. Very nice flavour.

I don't know what I did wrong
I don't know what I did wrong with this recipe but in all my years of cooking I have never encountered such a disaster. The batter was complete liquid which I read was normal. I had my oven down lower than your suggested temp because I know my oven well and it would have burnt the cake in that first half hour before covering. My cake was in for 1.5 hours....... complete slop in the middle while the outer casing was fairly dark and rubbery, suffice to say it went in the bin I am trying to decide whether I try making this again as the other reviews rav about. It sounds like a lovely cake but I just don't want to waste more ingredients.

Hi there
Some peelers do take off a little too much and then you have the white too, which you are correct does make things a little bitter. Maybe try out a different peeler or failing that just use a grater to zest the ornage or a micro plane. The reason I use the potato peeler is really just to save time in washing up and also my knuckles so I don't grate them too. Hope you understand what I am saying. Enjoy

Bur i have one question, when i peel the orange and lemon with a potatoe peeler i have on the backside of the zest the white skin of the fruits. Is that ok or is it better to try peeling without this white skins. I seem to remember that this white peel/skin makes everything bitter.
