Beef Stroganoff

  • 1 brown onion, halved
  • 500 g beef, rump, tenderloin, strips
  • 30 g ghee or oil
  • 1 tablespoon paprika
  • 1/2 teaspoon cayenne, more if you like it spicy
  • 20 gram apple cider vinegar
  • 50 gram water
  • 50 gram tomato paste
  • 1 tablespoon vegetable stock concentrate
  • 1 teaspoon Dijon mustard
  • 100 gram sour cream, Dairy free, see link for recipe

Recipe's Preparation

Beef

Chop onion speed 7 3secs

Add ghee or oil, parprika, cayenne, saute 3mins, Varoma, speed 1

Add beef, cook 10 mins, 100 degrees, rev, speed 1

Add remaining ingredients, cook 10mins, 100 degrees, rev, speed 1

Serve with cauliflower mash.

This was the best stroganoff i've ever had. I made a few tweaks;

- used 1/2 ACV & 1/2 Worcestershire sauce;

- added 2 small potatoes cubed, 1 carrot sliced & 6 button mushrooms

- skipped the water - was saucy enough.

AMAZING!!!!!!!!!!!!!!! I added some mushrooms to make up for having less meat and it was FANTASTIC!!!!!!!!!!  going straight to the collections for sure!  Cooking

So so good best Stroganoff i have made. I put the steamer onto top and did my veges at the same time.

This is delicious recipe. I added a little coconut cream for dairy free version and it was fine, couldn't taste the coconut.

Cooked this last night and I have to say it was lovely.  Quick and easy.  Added some extra vegetables and the meat was lovely and tender.  I think it does matter the cut of meat you use.  Won't work if you use a casserole cut.  I used round steak and got away with it but left the strips reasonably thick.  Really nice recipe and now in my faves list.  Thanks for posting it! Made some changes but overall this was awesome!

We had this for lunch and it was so yummy. We just put pasta in during the second cooking stage and it worked out great. Smile

Hi THank you for the feedback, i find larger pieces of beef work well, lately i have been using chicken instead which comes out really nice.

This sauce is delicious, I made it minus the cayenne and added a heap of veggies (carrot, celery, fresh paprika and eggplant) which worked really well.

 

is there any tip to getting the beef tender as mine came out quite tough.

I have been leaving out the cornflour and the result is just as deliscious and creamy

Thanks for this very yummy sauce...did a veggie version with diced eggplant, mushroom & capsicum & then spinach leaves at the end....beautiful! Smile
