Recipe's preparation

  1. Pre-heat oven to 175C

  2. Place sugar into mixing bowl and mill for 10 sec/speed 9 ans set aside.

  3. Place almonds into mixing bowl and mill for 15 sec/speed 7.

  4. Add icing sugar, almond essence, cornflour and egg white and mix for 40 sec/speed 5 with the aid of the spatula. If the mixture is sticky, add a little extra cornflour (this unbaked mixture is 'raw' marzipan and can be used to make tiny marzipan fruits, in other recipes requiring marzipan or to decorate a christmas cake)

  5. Roll the mixture onto ThermoMat or baking paper that is dusted in cornflour.

    Cut into star shapes with cookie cutter and place on a lined baking tray or on top of mince tarts. Bake for approx. 15 minutes or until they are golden brown.

Tip

To blanch almonds in Thermomix, cover them with water in the mixing bowl and heat for 4 min/varoma temperature/Counter-clockwise operation/speed 1.

    Shouldn't use cornflour with Marzipan... best to knead with icing sugar particularly if going to use it to cover a fruitcake..

    I made these for the stars on fruity pear pies in the Festive Flavour book. Easy peasy and no problems at all. Impressed myself entirely am able to make snazzy grandma marzipan tmrc_emoticons.-)

    Mixture was waaaayyyy too sticky to work with! Even after adding more cornflour as suggested (lots, lots more). Nice enough taste raw anyway but will not be making again.

    These were great. The icing sugar is actually the sugar you have milled. I cut them with a butterfly cookie cutter and dipped one wing in chocolate for a works morning tea. One guy ate 10 and still counting. A lot of people said that they don't like marzipan but after I convinced them to give it a try I had converted the room. These would be great in any shape for any occasion. cheers
