Basil Pesto

Ingredients

1 jar(s)

  • 2 cups Basil, washed
  • 1/4 cup Grated Parmesan Cheese
  • 1/4 cup Pine Nuts
  • 3 garlic cloves
  • 1 level tablespoon lemon juice
  • 1/4 cup Extra Virgin Olive Oil
  • 1 teaspoon Sugar, optional. ( I put Natvia)
  • Salt & Pepper optional

Recipe's preparation

  1. Crush garlic and pine nuts for a few seconds.

    Add basil, cheese and lemon juice. Whizz a few seconds. While processing add oil slowly. Then add sugar, salt and pepper if desired.

    This will keep in the fridge for a week. Or freeze in ice cube trays and thaw as needed.

    Just made this and it’s bloody good! To all the kitchen warriors who criticised it, if you’re so very talented in the kitchen, you should be able to figure out some of the nuances.

    It’s a pesto people - adjust it to your liking. If you don’t like tart things, start with less lemon juice. If your cheese/garlic/pine nuts aren’t whizzed/crushed enough - give them another second.

    The whole recipe takes about 40 seconds - take the time to enjoy your wine (though I suspect that the naysayers would be on the prosecco as wine isn’t at their level).

    Agree needs speed and times added, but I suppose that does depend what consistency you like it. I find the thermomix doesn't blend it well because everything goes up the bowl, other than that good recipe, only basil pesto I have made and is fine tmrc_emoticons.) thank you

    This recipe needs to be refined and more detailed. There is a fine line between 3sec and 5 secs of 'whizzing' otherwise it can turn to mush. 

    I wanted an easy recipe to follow for a basic pesto and this was terrible.

  • I have only had a thermomix

    I have only had a thermomix for 4 months but have been an ethusiastic (and successful, my friends tell me)  " amatuer chef" for decades.

    This would have to be the WORST thermomix recipe I have yet hit.

    i am currently at the stage of adjusting new recipes and old favourites to work wth my "thermi" and this looks just like a badly modified version of a conventional recipe with little, if any, thought as to how to simplify the process

    eg Why grate the chese in advance?

    Just as well I am not   a beginner (although the recipe is supposed to be suitable for same)  or I would have NO IDEA at what speed to "whizz""

    or how to "crush" the garlic and pine nuts - in the thermomix ????? -  what speed? 

    etc etc

     The taste is actually GREAT - if you like things tart - if not, you may need to reduce the large amount of lemon juice suggested.

    If you are adding that much lemon juice then reduce the olive oil significantly otherwise it is too runny

    You'll get a better taste with toasting the pine nuts (in the thermomix) first - then allow to cool. add the cheese to grate and garlic to chop (simultaneously chop the pine nuts) and then the  lemon juice and finally basil slowly at low speed to ocmbine so that when you increase the speed to blend (less time if you like a rougher texture) so you don't need to keep scraping the jug to keep blending - and then REDUCE speed to add oil - don't forget to use the reverse action if you want to preserve that rougher texture, and for "beginners" rememeber to pour the oil onto the lid of the jug with the measuring cup in place so it slowly drips into the mixture below

    Hope the above details help others
