  • 1/4 Pumpkin - cubed
  • 2 tablespoon fresh goats cheese
  • 150 gram pine nuts
  • 10 leaves basil
  • 1 teaspoon cumin ground
  • dash sea salt & pepper to taste
  • dash cold pressed extra virgin olive oil

Recipe's preparation

    Dip
  1. Preheat oven to 250 degrees, place cubed pumpkin in baking tray with some olive oil and bake on this top heat for 10 minutes, once reached 10 minutes turn down to 180 degrees and bake for further 15-20 minutes or until nicely cooked, the edges should be slightly charcoal and brown but don't burn it!

    Whilst this is cooking dry roast pine nuts in a frying pan on medium heat with a dash of olive oil, they only need a minute or so until slightly browned, DO NOT BURN!!

    Transfer pine nuts to TM bowl and blitz on speed 8, 10 seconds.

    Once the pumpkin has cooled down a little add all remaining ingredients and blend on speed 6 for 10 seconds. You can chill this in the fridge for a while or serve straight away. Amazing with Cydni O'Meara's gluten free bread, super yum with Kettle Sea Salt chips or served with just about anything. Everyone raves about this dip whenever I make it. Enjoy!!

    This is soooo good, I just finished making it and licked the spoon. Can`t wait to get stuck in! I did`nt have any goats cheese, I only had cream cheese so used 2 tablespoons. Thank You!
