If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place onion into bowl and chop 5sec/Sp 5. Scrape down sides. Add oil and cook 6mins/120C/"Counter-clockwise operation" "Gentle stir setting" .
Add garlic to bowl, chop 3secs/Sp 5. Cook 6mins/90C/"Counter-clockwise operation" "Gentle stir setting" .
Add chipotle to bowl. Chop 3secs/Sp 5.
Add the rest of the ingredients to the bowl. Cook 30mins/95C/"Counter-clockwise operation" .
At the end of cooking time, check for seasoning.

This recipe is originally from Foodnetwork.com. It comes from the series The Pioneer Woman, Ree Drummond.
This sauce is particularly strong in flavor. It is used when making pulled pork sliders. Once the pork is cooked and pulled, add some sauce to make it moist and unctuous.
This makes a very large quantity, so you can place in sterilized jars and store for a few months.
We added extra ketchup as the chipotles are quite hot, so adjust the amount of ketchup to counter the heat you like.

So easy and so yummy.
I couldn’t get the chipotle in adobo sauce so I used a chipotle sauce I found at the supermarket that said it was smoky and creamy. Therefore I didn’t add the chipotle to the bowl and chop it up I just added the sauce with all the other ingredients.
My mother came to visit 3 days after I made it, tried it and insisted I make some for her to take back to my stepfather in Tasmania.
