Red Curry Paste

  • 2 tablespoon red curry paste
  • 1.5 tablespoon vegetable stock conc
  • 1 litre water
  • 1 can coconut milk, 400ml
  • 1 can diced tomatoes, 400ml
  • 1.5 --- cups red lentils

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add all ingredients (except spinach) to Mixing Bowl

  2. Set for 15 minutes, 110 degrees, reverse speed 1

  3. Pour into 4 bowls and topped with chopped up spinach

    Such a quick and easy soup. Tastes delicious. Like others, 10 minutes is not enough to soften the lentils (20 minutes was perfect).

    Great recipe for a quick healthy meal. Next time I might add some cooked shredded chicken to the bowl too! Like one of the other comments, I cooked for an extra 10 mins to make the lentils nice and soft.

    Delicious, quick and easy! I did cook mine for an extra ten minutes though because I like my lentils a bit softer (I used dried).

    Does a LOT more than 4 portions, unless those 4 people like a VERY full bowl, LOL! Very easy and tasty, everything I like in a soup. A little spicy for my kids, but I may have added a tad extra curry paste "for luck". I also don't like my soup lumpy, so I whizzed it up gently til smooth.
