Best ever pumpkin and veggies soup

  • 1 brown onion
  • 3 cloves garlic
  • 20g olive oil
  • 500g pumpkin flesh of choice
  • 350g Sweet Potatoes
  • 150g Zucchinis
  • 100g carrots
  • 2 level tablespoons Vegetable stock paste
  • 1 level teaspoons sweet paprika
  • 700-800g water

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Add onion and garlic to the mixing bowl, chop 7 sec/speed 5
    Scrape down sides of the bowl.

    2. Add olive oil and cook for 6 min/varaoma temp/speed 1 placing the simmering basket on top of the lid instead of the MC.

    3. Chop Pumpkin, Sweet potoato, zucchini & carrots into small chunks (approx 4x4cm)and add to the bowl once onion is cooked.

    4. Add water, stock, & paprika and cook for 20 min/ 100 deg C/reverse speed1.
    Place the simmering basket on top of the lid instead of the MC during cooking time.
    Make sure vegatables are very soft (if not cook for another 5 min or to your liking.

    5. Remove the simmering basket, place the MC on the lid and blend for 1 min/speed 5 gradually increasing to speed 9.

    6.Serve with a spoonful of cream or sour cream if you desire!Closed lid
