  • 900 g water, equal water to vegetables
  • 3 tsp vegetable stock, paste or powder
  • 900 g cauliflower,& leek, cut into small pieces
  • 2 pinches sea salt, to taste
  • 25 g butter, to taste or olive oil, to taste

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Cauliflower soup
  1. Place water, stock paste, cauliflower, leek, salt and pepper (optional) into mixing bowl and cook 20 min/100°C/speed 1.
  2. Add butter or olive oil and cook 5 min/100°C/speed 1, then blend 1 min 30 sec/speed 5-9, increasing speed gradually.
  3. Serve soup hot with Parmesan cheese, and topped with a sprinkle of bacon dust (optional).

Tip

You will find another version of Bacon Dust called Virtual bacon dust in Dani Valent's In the Mix on pg 60.Variation:Bacon truffle cauliflower soup: add 150g cooked bacon pieces, to taste when serving and substitute the butter with 1-2 tsp truffle oil for a slightly more decadent flavour.
